These compounds are known for their antioxidant properties, and, according to scientists, can be used to treat and prevent cancer.
The purple color of eggplant and brown beets will certainly not see anyone. What about purple peas, tomatoes, cauliflower and "sweet potatoes"? These vegetables are also rich in anthocyanins and are worthy of special attention.
1. Purple Kale, or Kale
A very unusual kind of cabbage. It does not have the usual head of cabbage and is more reminiscent of a leafy palm tree than a vegetable crop. Kale leaf blade is distinguished by a corrugated bubble surface with rugged edges resembling curly fringe. Most varieties of this culture are bluish or green, and only a few varieties of curly cabbage have an attractive purple color: Redbor and Scarlet.Kale, or Kale of violet color.
Often, Kale cabbage is grown as an ornamental plant to decorate the autumn garden, because this culture can withstand frosts of minus 15 degrees and remains beautiful for a very long time. In this case, the frost makes the purple foliage of curly cabbage brighter and more saturated. The rich composition of this vegetable also allows you to successfully include it in the menu and use it as a useful vitamin-mineral supplement.
Useful properties of kale cabbage
Sometimes kale is called "vegetable meat", because its foliage is rich in protein and contains a rich set of amino acids, not inferior to meat products. But in terms of calcium content, curly cabbage even overtook milk. This culture is rich in a complex of B vitamins (B6, B2, B1) and other vitamins (A, C, K, PP), as well as valuable minerals (potassium, phosphorus, magnesium, sodium and beta-carotene).
