Beauty is not the main requirement that is usually made for vegetables. Nevertheless, many summer residents want the garden to bring not only purely practical benefits. The aesthetic pleasure of a crop obtained by hard work can be an additional incentive for growing vegetables with your own hands. But sometimes fashionable wonders, striking in their exotic look, turn out to be completely inexpressive in taste. Are there "perfect" vegetables in the vegetable world, the bright appearance of which does not contradict the content? In this article I will talk about unusual tasty vegetables of violet color, which I have been successfully growing for several years.

7 healthy and delicious purple vegetables

According to doctors, purple vegetables are not only tasty and attractive, but also incredibly useful, due to the high content of anthocyanins in them - pigmented substances that give the fruit a purple color. These compounds are known for their antioxidant properties, and, according to scientists, can be used to treat and prevent cancer.

The purple color of eggplant and brown beets will certainly not see anyone. What about purple peas, tomatoes, cauliflower and "sweet potatoes"? These vegetables are also rich in anthocyanins and are worthy of special attention.

1. Purple Kale, or Kale

A very unusual kind of cabbage. It does not have the usual head of cabbage and is more reminiscent of a leafy palm tree than a vegetable crop. Kale leaf blade is distinguished by a corrugated bubble surface with rugged edges resembling curly fringe. Most varieties of this culture are bluish or green, and only a few varieties of curly cabbage have an attractive purple color: Redbor and Scarlet.

Kale, or Kale of violet color.

Often, Kale cabbage is grown as an ornamental plant to decorate the autumn garden, because this culture can withstand frosts of minus 15 degrees and remains beautiful for a very long time. In this case, the frost makes the purple foliage of curly cabbage brighter and more saturated. The rich composition of this vegetable also allows you to successfully include it in the menu and use it as a useful vitamin-mineral supplement.

Useful properties of kale cabbage

Sometimes kale is called "vegetable meat", because its foliage is rich in protein and contains a rich set of amino acids, not inferior to meat products. But in terms of calcium content, curly cabbage even overtook milk. This culture is rich in a complex of B vitamins (B6, B2, B1) and other vitamins (A, C, K, PP), as well as valuable minerals (potassium, phosphorus, magnesium, sodium and beta-carotene).

The high protein content and a whole range of healthy nutrients make this vegetable indispensable in a vegetarian diet. It is useful to use Kale cabbage in order to overall strengthen the body, as well as with increased load on the eyesight.

Features of growing kale cabbage

For planting curly cabbage choose a well-lit place. At the same time, the soil should be rich in nutrients, since cabbage forms bitter and small leaves on low-fertile soils. It is best to grow feces through seedlings, so that it has time to grow to a significant size.

Seeds are sown 1.5 months before planting in the ground. Landing at a permanent place can be carried out in mid-May. Caring for cabbage is easy. It includes regular watering, organic dressing and pest protection.
